LE SAVOIR-FAIRE SO'BOUTARGUE
L'or de la Méditerranée,
façonné à la main.
Une boutargue d'exception, préparée à Cotignac dans le respect du produit, du temps et du geste.
An Authentic Bottarga, Fruit of the Sea and the Sun
At So'Boutargue, every piece of bottarga (or poutargue) is a true tribute to tradition and artisanal craftsmanship, passed down from generation to generation.
Precious and Natural Ingredients
Our bottargas are prepared from wild mullet roe, caught in the warm waters of the Atlantic. These eggs are then salted with organic salt and rinsed with pure spring water. The drying process takes place in the pure, sunny air of Provence, where the natural environment plays a key role in the unique character of our products.
Artisanal Care
Each bottarga is meticulously washed and salted by hand before undergoing a drying phase in an ideal setting, far from any pollution. Located in the heart of green Provence, surrounded by olive groves and lavender fields, our artisanal method ensures premium quality.
The Perfect Finish
To preserve their freshness and aromas, our bottargas are then coated in a fine layer of wax enriched with beeswax from the Ruchers du Bessillon in Cotignac. This delicate and authentic expertise gives our products an incomparable texture and flavor, worthy of the finest tables.
Each bite of our bottarga transports you to Provence, where the sea and the sun meet to offer an exceptional product.
